Turmeric Root Chutney


Quantity: 250 Grams of Turmeric Root

Ingredients: 
1. Ginger Garlic Paste - 1 Tablespoon 
2. Onion Paste - 1/2 cup 
3. Tomato Paste - 3/4 cup to 1 cup (based on your preference for sourness)
4. Jeera - 1/2 Tea Spoon
5. Finely chopped Green Chillies - 2
6. Red Chilly Powder - 1 Tea spoon
7. Ghee - 2 Tablespoon
8. Salt to taste
9. Grated Turmeric Root - 250 grams
10. 1 cup fresh curd

Method: 

1. Heat Ghee in a pan
2. Add Jeera, allow to spurt, add finely chopped green chillies - Saute for till chillies are lightly roasted
3. Add Ginger Garlic paste, Onion paste - Saute till golden brown
4. Add Tomato Paste - Saute till tomato puree blends well
5. Add grated turmeric root 
6. Add salt to taste, Add Red Chilli powder
7. Mix all the ingredients and cook until the mixture leaves the sides of the pan
8. Once the ingredients are cooked well, add fresh curd, mix well and cook for 5 minutes
9. Garnish with Curry Leaves and Mustard ( if desired) 

Serve with Dosa or Chapathi as a tangy, healthy side dish.
